Potato, courgette and onion omelette
An omelette with vegetables steamed instead of fried, making it lighter and easier to digest. You can cut it into small portions and eat it throughout the day, cold or at room temperature, which may be easier when you do not feel like sitting down to a full meal.

Who this recipe is for
It can be eaten in small portions at any time: it fits into the weekly menu for people with cancer on days when appetite is low.
Ingredients
Quantities for 3 servings. Tick off what you already have.
Step by step
- Peel and thinly slice the potatoes, courgette and onion.
- Steam them for 12 to 15 minutes, until tender, then drain them well.
- Beat the eggs with a pinch of salt and mix them with the warm vegetables.
- Heat a non-stick frying pan with a tablespoon of oil and pour in the mixture.
- Cook over low heat for 4 minutes until set, turn it over using a plate, and cook for 3 more minutes, until thoroughly cooked through.
- Let it rest and cut it into small portions.
Adaptations
How to change it depending on the day. Each change keeps the dish, it does not replace it.
Nausea or sensitivity to smells
Cook the mixture in the microwave in a covered container for 4 or 5 minutes: there is no frying pan or smoke, and you can eat it cold or warm.
Mouth sores or dry mouth
Make it without onion. When your mouth is irritated, onion, tomato, garlic, pepper and cucumber are the foods that tend to bother you most.
Poor appetite
Add a tablespoon of grated cheese or brewer’s yeast to the mixture, and eat a portion every few hours instead of a whole serving at once.
What it provides
It provides complete protein from the eggs, carbohydrates from the potatoes, and water and fibre from the courgette. Steaming the vegetables means it contains much less fat than a fried omelette.
The dietitian's tip
The omelette keeps well for two days in the refrigerator, covered: if you make it on a day when you have the energy, it can provide several meals. Take it out of the refrigerator half an hour beforehand (never more than one hour): it can be harder to swallow when very cold.
This is part of the weekly menu for people with cancer. Also from the same menu: melon and almond gazpacho and vegetable and potato purée.
What a recipe is not
This recipe fits into a plan; it does not replace one. It cures nothing and it is not calculated for one particular person: the quantities are indicative and will need adjusting to your case.
If you have a medical condition, take medication or follow a prescribed diet, check with your doctor or your dietitian before changing anything.
