Creamy rice with monkfish
A soupy rice dish with monkfish, onion and saffron, cooked in fish stock until creamy. It is an easy-to-swallow one-pot meal with protein and carbohydrates, although it is best made on a day when the smell of cooking does not bother you.

Who this recipe is for
A spoonable dish of fish and rice: it fits into the weekly menu for people with cancer as a complete meal.
Ingredients
Quantities for 2 servings. Tick off what you already have.
Step by step
- Heat a few drops of oil in a casserole dish and brown the monkfish pieces for 2 or 3 minutes. Remove and set aside.
- In the same casserole dish, gently brown the chopped onion. If strong flavours do not agree with you, do not skip this step: slow cooking mellows the onion.
- Sprinkle in the saffron, stir and season with salt and pepper.
- Add a little stock and the rice, and fry gently for 2 minutes.
- Pour in the remaining stock and cook over a low heat for 14 minutes.
- Return the monkfish to the casserole dish and cook for 3 more minutes. Serve straight away.
Adaptations
How to change it depending on the day. Each change keeps the dish, it does not replace it.
Nausea or sensitivity to smells
Ask someone else to cook it, and air the house before eating: together with fideuà, it is one of the two strongest-smelling dishes of the week.
Mouth sores or dry mouth
Make it without saffron or pepper, let it cool until warm and add more stock so it is almost like a soup.
Poor appetite
Serve a small, brothy bowl and add a tablespoon of uncooked oil at the end.
What it provides
Monkfish provides lean protein and rice provides carbohydrates. Because it is brothy, it can be eaten with a spoon and is easy to swallow.
The dietitian's tip
A creamy consistency comes from using more stock and cooking over a low heat, not from stirring; if it is overcooked, the rice will split. You can replace the monkfish with hake or cod.
This is part of the weekly menu for people with cancer. Also from the same menu: seafood fideuà and cod with tomato sauce and bread.
What a recipe is not
This recipe fits into a plan; it does not replace one. It cures nothing and it is not calculated for one particular person: the quantities are indicative and will need adjusting to your case.
If you have a medical condition, take medication or follow a prescribed diet, check with your doctor or your dietitian before changing anything.
