Step by step
- Wash and chop the tomatoes, pepper and peeled cucumber.
- Put them in a blender with the garlic, if you tolerate it, and a pinch of salt.
- Blend for one minute, until smooth.
- Add the olive oil and blend for another 20 seconds to emulsify.
- Strain it for a smoother texture if you like, then chill in the fridge for at least an hour. Serve cold.
Adaptations
How to change it depending on the day. Each change keeps the dish, it does not replace it.
Mouth sores or dry mouth
If you have mouth sores, avoid it on those days: it is acidic and can be quite irritating. Choose warm pumpkin soup or vegetable purée instead. If your mouth is dry but you have no sores, acidity may help stimulate saliva.
Poor appetite
Do not have it on its own: serve it with chopped hard-boiled egg, tuna or croutons, or add another tablespoon of oil while blending.
Altered taste
If your sense of taste is altered, it may seem very acidic: try a spoonful before pouring yourself a whole glass.
Diarrhoea
Strain it to remove skins and seeds, or replace it with fat-free stock.
What it provides
Mostly water, with vitamin C and fibre from the raw vegetables and beneficial fats from olive oil. It helps with hydration but is not a complete meal on its own.
The dietitian's tip
If you chill it well, you do not need ice, which would water it down. On its own it is not a complete meal: serve it with carbohydrates such as bread or potato, and a source of protein such as egg, tuna or fresh cheese.
It is part of the weekly menu for people with cancer. Also from the same menu: melon and almond gazpacho and mixed salad.
What a recipe is not
This recipe fits into a plan; it does not replace one. It cures nothing and it is not calculated for one particular person: the quantities are indicative and will need adjusting to your case.
If you have a medical condition, take medication or follow a prescribed diet, check with your doctor or your dietitian before changing anything.
