Who this recipe is for

A frozen banana and coffee dessert for two, with no added sugar and no ice-cream maker needed.

Ingredients

Quantities for 2 servings. Tick off what you already have.

Step by step

  1. Prepare the banana in advance: peel and cut very ripe bananas into pieces and freeze them for at least 5-6 hours beforehand (you can freeze any extra bananas and always have some on hand).
  2. Put the frozen bananas, coffee, plant-based milk and vanilla essence in the blender. The amounts of coffee and plant-based milk are a guide and can be adjusted to taste; take care not to add too much liquid.
  3. Blend until you reach the desired texture, taking care not to overblend.
  4. Serve topped with the dark chocolate and chopped hazelnuts.

Adaptations

How to change it depending on the day. Each change keeps the dish, it does not replace it.

  • Baked variation: coffee oat bites

The original suggests a baked variation using 1/3 cup of strong, cold coffee, 1/3 cup of whole milk, 2 1/2 cups of rolled oats, 3 eggs, half a stick of butter, 2/3 cup of maple syrup (or date paste), 1 teaspoon of baking powder, a pinch of salt, 1 cup of chopped walnuts and 3/4 cup of chopped raspberries: mix the dry ingredients separately from the wet ingredients, combine them, add the walnuts and raspberries, shape into small balls and bake. The original says to bake at 300 ºC for 35 minutes, a temperature that appears to be an error (probably 200 ºC); it has not been corrected without a source. Do not upload this variation as a separate recipe until the temperature has been confirmed.

What it provides

The very ripe banana provides the sweetness, with no added sugar. Coffee adds flavour without needing more ingredients, and nuts provide unsaturated fats.

The dietitian's tip

This is a very simple recipe: the riper and better frozen the banana is, the creamier the ice cream will be. You can add other fruit, pure cocoa or oats on top.

What a recipe is not

This recipe fits into a plan; it does not replace one. It cures nothing and it is not calculated for one particular person: the quantities are indicative and will need adjusting to your case.

If you have a medical condition, take medication or follow a prescribed diet, check with your doctor or your dietitian before changing anything.

Would you like a plan made for you?

A recipe fits or does not fit depending on what is going on with you. In clinic we build the whole plan around what you eat, what you tolerate and what you fancy.
