Who this recipe is for

A hydrating, very low-calorie chilled vegetable soup. It fits into a weight-loss plan or makes a refreshing summer starter.

Ingredients

Quantities for 4 servings. Tick off what you already have.

Step by step

  1. Wash the ripe tomatoes, cucumber and green pepper thoroughly; remove the pepper stem and seeds.
  2. Chop the vegetables and place them in a blender with the peeled garlic (without the central germ), torn day-old bread, extra-virgin olive oil and vinegar.
  3. Blend on high for 2 or 3 minutes until smooth.
  4. Pour in the cold water gradually while blending until it reaches your preferred consistency.
  5. Pass the gazpacho through a fine sieve or food mill if you prefer a particularly silky texture without any skin.
  6. Refrigerate for at least two hours before serving well chilled.

Adaptations

How to change it depending on the day. Each change keeps the dish, it does not replace it.

  • For people with coeliac disease or avoiding gluten

Replace regular bread with gluten-free bread or leave it out and adjust the water to keep the soup light.

  • If garlic or cucumber tends to repeat on you

Remove the central germ from the garlic and use only half a clove, or peel the cucumber completely before blending.

  • If you would like more texture

Set aside a little finely diced tomato, cucumber and pepper and add them as a garnish when serving.

What it provides

Tomatoes and cucumber provide plenty of water and potassium, supporting hydration with very few calories. Extra-virgin olive oil adds monounsaturated fatty acids that improve the absorption of tomato carotenoids such as lycopene, while the small amount of bread adds a little body without greatly increasing the carbohydrate content.

The dietitian's tip

Use ripe, seasonal tomatoes for the best flavour and natural colour, without needing sauces or artificial seasonings. If you make a large batch, keep it covered in the fridge and eat it within two or three days.

It fits into our weight-loss plan. Other refreshing chilled soups: light Córdoba-style salmorejo and watermelon gazpacho.

What a recipe is not

This recipe fits into a plan; it does not replace one. It cures nothing and it is not calculated for one particular person: the quantities are indicative and will need adjusting to your case.

If you have a medical condition, take medication or follow a prescribed diet, check with your doctor or your dietitian before changing anything.
