Who this recipe is for

Ingredients
Quantities for 4 servings. Tick off what you already have.
Step by step
- Cut the ripe avocado lengthways, remove the stone and scoop out the flesh with a spoon.
- Squeeze the lime juice over the avocado flesh straight away to prevent browning and add freshness.
- Put the avocado and lime, natural yoghurt, chilled vegetable stock and washed coriander leaves in a blender.
- Blend on high for two minutes until smooth, creamy and pale green.
- Add a little more vegetable stock if you prefer a thinner, more drinkable consistency.
- Season with freshly ground black pepper and salt only if needed.
- Store in a tightly sealed container in the fridge and serve well chilled, preferably on the same day.
Adaptations
How to change it depending on the day. Each change keeps the dish, it does not replace it.
If you do not like coriander
Replace it with fresh basil leaves or parsley for a fresh, milder flavour.
For a vegan or lactose-free option
Replace the natural yoghurt with unsweetened soya yoghurt or a neutral plant-based drink.
For a hint of heat
Add a very thin slice of fresh jalapeño or a pinch of chilli powder before blending.
What it provides
Avocado provides monounsaturated fatty acids, mainly oleic acid, as well as fibre and potassium. Yoghurt adds dairy protein and calcium, while lime juice provides vitamin C and may help slow the avocado’s discolouration.
The dietitian's tip
Avocado tends to darken after being exposed to air. Ideally, eat this soup on the day you make it and always keep it in a tightly sealed container in the fridge.
It fits into our weight-loss plan. Other refreshing and satisfying chilled soups: chilled melon and cucumber soup and chilled pea and mint soup.
What a recipe is not
This recipe fits into a plan; it does not replace one. It cures nothing and it is not calculated for one particular person: the quantities are indicative and will need adjusting to your case.
If you have a medical condition, take medication or follow a prescribed diet, check with your doctor or your dietitian before changing anything.
