Nutrition consultancy for product development: a new seaweed-based product for older adults
The challenge
Developing a new food product for older adults that met this group’s specific nutritional needs, incorporating innovative ingredients such as seaweed and ensuring a rigorous approach in nutritional and functional terms, suited to the consumer profile.
The solution
At Alimmenta we provided nutrition consultancy for product development, supporting the design process of the new product with expert nutrition and health judgement.
The project included:
- An analysis of the nutritional needs of the older population, taking into account factors such as specific requirements, digestibility and product suitability.
- Defining nutritional criteria for product development, aligned with a health and wellbeing approach for older adults.
- Evaluating the use of seaweed as an ingredient, assessing its nutritional and functional fit and its contribution to the product profile.
- An organoleptic test at a care home for older adults, to assess the product’s acceptance, sensory characteristics and suitability for the end consumer profile.
- Supporting the development team, contributing nutritional judgement across the different phases of product design.
- Applying scientific evidence to underpin the nutritional and formulation decisions.

A product concept that is nutritionally sound and aligned with the needs of older adults, incorporating innovative ingredients from a health and wellbeing perspective.
The project helped advance the development of a new product with a solid nutritional foundation, strengthening decision-making in the innovation process and laying the groundwork for a coherent, viable product aligned with nutrition and health criteria.
